From time to time I go into Stepford Wife mode and start to bake little treats for my husband to take to work in the morning. I know - I am faintly ashamed of it. But he is a bit prone to missing breakfast and then not finding anything nutritious for lunch... So I am always on the lookout for healthy things that won't get too squashed in his laptop bag.
Esi's Oatmeal Breakfast Bars certainly fit the bill. I left out the lavender because it smells like my grandmother and tastes like soap... and I made a few other changes to fit what I had in the pantry. So instead of pistachios I used a mixture of sunflower and pumpkin seeds (maximum nutrition and fibre!) and instead of honey (because I would have had to open a fresh jar) I used Seville orange marmalade.Very successful! Chewy, moist and satisfying. There won't be any left by the time Monday comes around, so I might have to buy some more yoghurt and make another batch. Maybe with some dried sour cherries and the pistachios, and trying using honey as per the original recipe this time!

Oh they sound delicious FC! I like the idea of the marmalade in them too. I think sour cherries and pistachioes would be great as I make some, from Nigella Express, which have crasins, mixed seeds (well I used almonds), peanuts and coconut which are great!
These would be great to make before a trip for those times you need a quick power snack, better than a store bought bar!

Kat - totally. The store bought ones are always so sweet and they usually have a lot of weird stuff in them that I really don't think is food!

You should have a look at Deb in Hawaii's wheatgermy chocolate things then! The orange from the marmalade is good, but I think the texture would be better with honey.
This is just the kind of thing that I'd love to make and bring to work. Because it's also the kind of thing that I would have absolutely no self control with. (he he).
I'd skip the lavender too. :)
These would be perfect for my commuters. I do make breakie for hubby but my daughter can't bring herself to eat first thing in the morning. Something like this would be perfect.

Natashya - I can't eat first thing either. Anything that is as convenient as a croissant but healthier is a good thing.
