Crispy chicken thighs

So can you tell I opened a bag of panko recently?

These crispy thighs are amazing. I can't remember where I originally got the recipe, but I have made very few changes.

Crispy crumbed chicken

Cut skinless chicken thigh fillets into chunks (I usually cut each fillet into 3) and marinate in Greek yoghurt flavoured with crushed garlic and lemon zest for as long as you've got (I put these into the marinade before work with the intention of eating them that night but then ate them the next day).

Remove the thighs from the marinade, toss in seasoned breadcrumbs (yay panko!) place in a single layer in a baking tray, drizzle with a little olive oil and bake at 200C for about 30 minutes or until cooked through and crispy. Serve with a lemony salad and a squeeze more lemon juice.

I also had some mushrooms sauteed with bacon and garlic on the side because I had a rasher left over from breakfast the other day that I couldn't freeze again and wouldn't waste.

Minimum effort and very tasty - a real crowd pleaser. We agreed that next time I made this I would put some grated parmesan in with the panko.

Oh lovely! I think parmesan would be great with them, though they are very very delicious how they are!

I love Panko - I can't get it here but pick it up in the city when I can.

These sound so delicious! I've always wanted to find Panko...as far as I'm aware it's not particularly mainstream here.

Great recipe foodycat. I love chicken. I prefer it over beef. I haven't tried panko yet, but these look mighty crispy and tasty. I think you've convinced me to give it a try. Great post.

Deb - I don't think I have done anything with regular breadcrumbs since I found panko!

HH - they are so good like this, but I can't help mucking about with recipes.

Natashya - everyone would eat it, and you can make it more or less sophisticated depending on who you are serving it too.

Laura - have you got any Japanese grocers nearby? I have to go to oriental shops for it.

Sam - they should pay me to do ads for panko! I don't use it for about a year and then I use it for everything!

Teresa - give these a try. I suspect you will make one of your amazing chilli sauces and make them so special!

I do my crispy baked chicken the same way though marinade it in buttermilk. Its so good, isn't it?!

This recipe is related to my "Leanne's chicken breasts" - I have many recipe that start with "Leanne's". The breasts are marinaded in 2 Tbsp yoghurt / 1 Tbsp grainy mustard / 1 Tbsp vinegar / 1 Tbsp honey, then rolled in seasoned breadcrumbs and baked.

We have just enjoyed this recipe. Instead of panko I used some of the organic wholemeal beadcrumbs that I store in the freezer - seasoned with Herbie's Greek spice mix to keep the lemon / garlic / herb theme. Very nice.

sounds very japanese! serve with a brown japanese sauce and you've got a great japanese fried chicken dish! looks SOOO good and crunchy.

Cooking & the City - I'd much rather snack on something crisp and savoury like this late at night!
