Scotch Egg Pie

Spring started so well. We sat out in the garden, enjoying the sunshine and planning a hot summer of barbecuing and picnics.

But now, in the height of "summer" the weather isn't really lending itself to eating outdoors. Drought has been declared in parts of the East of England, but in our bit of greater London we've had daily, torrential rain for a couple of weeks now.

Still, when you make something like this lovely Scotch Egg Pie, it holds the promise of outdoor eating to come. One day.

I used bought puff pastry and should have used about another 200g of sausages to fill it out abundantly, but even slightly underfilled it made a delicious portable lunch.

aaaw, look at your kitty. As for the pie, things turn out for a reason- a nice portable lunch! :)

This is a perfect portable lunch. Its so pretty and the egg looks just delicious snuggled in there with all that sausage :)

I've had Scotch eggs, but never Scotch egg pie. Looks yummy. The cat is gorgeous!

Leafy - I can't believe I hadn't tried it earlier.

Arlene - I also like that (unlike Scotch eggs) this isn't deepfried. The pastry probably has just as much fat, but the fact that it is baked is reassuring.

Been meaning to try this since I saw the recipe. What size tin did you use? I only have 1lb or 2lb loaf tins. Urchin looks lovely in that photo. (And all the time of course).

Urchin looks like she is queen of the picnic. ;-) This looks like perfect outdoor summer fare even if the weather isn't up to par.
