Ham & Cheese Croissants

This is one of those very useful things - a brunch recipe that you can prepare in advance, make for large numbers and is very simple, but tastes brilliant and is a real crowd-pleaser. They contain about a million calories, so I would recommend only having this for special occasions. And have some orange juice in your champagne, to make you feel more virtuous.

Because it is so simple, it pays to use some nice ingredients.

Ham & Cheese Croissants (serves 2)

4 croissants (all butter ones, not the ones with weird fats and shortening in them, and not the absolutely huge ones)
Dijon mustard
4 thick slices of good ham (this was a dry-cured, cherrywood smoked ham)
4 thick slices of gruyere cheese

Preheat the oven to 160C. Cut each croissant in half. Smear the cut surfaces with a little mustard. Fill each with a slice of ham and a slice of cheese. Put the top of each croissant back on and place them on a baking parchment-lined baking sheet. Bake for about 10 minutes, or until the croissants are browned and the cheese is oozy and beginning to take a bit of colour. Allow to rest for a couple of minutes before serving, just to avoid all your guests burning their mouths.

This is breakfast at its best! Nothing like a warm croissant filled with slices of country ham & swiss cheese. Start brewing a new pot of coffee, I am heading to your place for breakfast.

I just made this for lunch. Took 5 minutes. I made open faced sandwich, turkey (leftovers) and the gruyere cheese under the broiler til it melted...

OK, not exactly what you made, but inspired.

Sure wishing I was in Australia right now...we just got 8 inches of snow, and probably will not be out of our driveway til Monday

A million calories, yes, but a very satisfying million. I do so agree about adding a spot of orange juice to the champagne. We need our citrus! Merry Christmas.

Very nice. With large croissants and inferior filling this is just excess calories for no good reason. Dainty croissants and good ham & cheese and it is a treat.

Oh yummy! We made these this last summer for a graduation party, only since we were feeding an army we did small dinner rolls, deli ham and Swiss cheese. Wrap in foil and heat. They stay nice and warm in the foil. I bet they are stellar on croissants
