Spinach with Spirali


I remarked months ago that the sight of pasta with something green and something pink made me nostalgic for spinach with spirali. Well, a couple of weeks ago it came to a head and I just had to have it.

Bacon, fried with garlic and chilli. Frozen chopped spinach. And this was cavatappi, not spirali, but it was just the thing to grip the sauce in its curls and ridges. It was every bit as good as I remembered. More to the point, Paul, who didn't grow up with this and therefore didn't wear the rose-coloured glasses of nostalgia, thought it was pretty good too. Unlike last night when he indulged me and watched The Breakfast Club.

Spinach is a versatile enough veggie to go great with pasta. I just did a penne dish with artichoke last week. Turned out pretty tasty. This looks like a must do.

I've never had this, but it sounds delicious. I didn't like pasta or spinach growing up. Now, it seems like a marriage made in heaven. And bacon. Wow! I've got to try it. I happen to love cavatappi, too.

I just put some bacon back in the freezer and now I am thinking I should defrost it to make this dish. So simple and yet it just tastes so wonderful.

Arlene - you didn't like pasta? Wow! I can't imagine not having grown up on pasta.

Esi - get that bacon out of the freezer! The other great thing about this dish is that it's as easy to do for 1 as for 4 people.
