The leftovers, warmed through in the oven, were fantastic later in the day with some cheese.

Boxty - hangover breakfast of champions
One of the things about not being totally on-board with the whole Jubilee business is that I haven't overindulged quite so much as some. But if I had, these delicious Irish potato pancakes (served with bacon, black pudding and tomatoes) would definitely be my restorative breakfast of choice. They are made with a combination of raw (grated) and cooked (mashed) potatoes, bound with a bit of flour and lightened with a smidge of baking powder. I used this recipe, although I used plain yoghurt instead of buttermilk. And I made them much thicker than they should have been, so I did struggle a little to cook them through.

Great breakfast. I've not come across using raw and cooked potatoes together - imagine that makes for an interesting texture. AND I'd never have noticed your stove if you hadn't pointed it out, the potatoes look so good!
Oh yeah sounds like something I'd crave after a festive night
Choclette - it's a good texture. Lighter than a potato cake, less greasy than roesti.
Kat - I think they'd be a good lunch too.
That's really interesting: a potato cake that needs kneading. I'll have to give it a shot the next time I have leftover mashed potatoes.
My husband would love this version of boxty. I usually make it for St.Patrick's Day, but not for other breakfasts. That's my bad and I'll have to try and remedy that. Have a wonderful day. Blessings...Mary.
Wild tomato - they are lovely! And of course, they have very little gluten so kneading doesn't make them tougher.

This looks like a very interesting recipe. Your stove looks well used, which is as it should be. I have been trying to guess what's in the pan in the back: is that some kind of sausage?
Simona - it's slices of black pudding (blood sausage).
Wow these bring back memories - my Grandmother used to make them - but I haven't had them in years (many, many years, lol!). I will have to give them a go :-) Have a great weekend, Becks x
