Best carrot cake in the world? Second attempt

Another load of carrots in the veg box means another attempt on Aunty Ena's title as best carrot cake maker in the world.

This time I used a Jamie Oliver recipe, which is no longer online and I can't remember what it was called to see if it's anywhere else. And I made a lemon cream cheese frosting, topped with a little flick of orange zest rather than the lime mascarpone frosting.

This was a gorgeous cake! For me, pretty nearly perfect. Paul thought it should have had more walnuts and more spice in it, which leads me to think that he actually doesn't want it to taste like carrots at all.

So this is the best carrot cake in the world that still tastes a bit like carrot.

It looks deliciously moist. I love the look of it in a loaf tin too, it never occurs to me to bake carrot cakes in a loaf tin. The icing looks amazing!

I just adore Carrot Cake. And, you should have seen the post I did for Carrot Cake Day. (it wasn't carrot cake at all) Why? I just can't seem to find that "perfect" one. I may just have to try that recipe.

Thank you so much for sharing...

It looks like it could be the best carrot cake in the world -- can you send Fat Couriers with a slice, pretty please?

That looks a great cake, it's quite highly spiced and, unusually, made with butter too! Good news that you've made such a successful cake!

C - if the picture of the original cake hadn't been in a loaf tin, it probably wouldn't have occurred to me either.

Louise - give it a shot, it is very good!

Cranky - I sure will!

The carrot cake and frosting looks great; love the idea of pairing carrots with some orange flavor.

Suelle - I am very pleased with it. I thought my cake-making mojo was gone for good!

Joumana - carrot and orange is a really lovely combination.

I am pleased it turned out so well FC otherwise I would have gotten recommenders remorse. I like the idea of the lemon and orange in the icing, rather than the lime, good idea!

Heather - definitely try it!

HH - no need for recommender's remorse at all! It's a great cake.

Carrot cake is such a treat! I like to make it in muffin tins so I can exercise some semblance of portion control. Else, I'm doomed!

Too funny! I think it looks wonderful and carrot cake that still tastes like carrots is a winner in my book. ;-)

Mary - and a lovely day to you too!

Wild tomato - I find portion control easier with a loaf cake than a round cake, I don't know why!

Deb - I don't really see the point if it doesn't taste of carrots.

Oh my! This is on my must make list! Thanks FC.

Now my husband on the other hand prefers it if I leave all nuts & dried fruit out of the carrot cake!

Alicia Foodycat said...

Jude - it gives me confidence in Jamie's recipes.

Kat - I do like the nuts!

carrot cake is useful to me for one reason and one reason alone--it's an amazing vehicle for cream cheese frosting. so even if it tastes like carrots, it's still worth eating. :)

Don't think I've every had a carrot cake that tastes of carrots. Haven't made a carrot cake for years, so will have to give it a try.
