Meat free Monday: broccoli vinaigrette


This is a quick, delicious and healthy dinner - while the eggs coddle, the broccoli is zapped in the microwave until tender and ludicrously green. A vinaigrette of shallots, mustard, capers and white wine vinegar also gets a quick 30 second hit in the microwave to heat it and soften the shallots. A bit of ground pepper and dinner is on the table in under 10 minutes.

Oh I like a lentil salad like this so why not broccoli, sounds good!

Broccoli and carrots at the moment are here woody and bland because of the abundant rain; vinaigrette might perk up my broccoli somewhat.

Deb - you could have it with asparagus instead, if you really can't deal with broccoli.

I use the microwave to warm up the vinaigrette as well, but i had never thought of adding shallots to it. Thanks for the suggestion.

Those eggs look perfect. Now are coddled eggs different to poached and if so how? I'm hopeless at poaching eggs.

Simona - the shallots are really good in it.

Choclette - coddled eggs are cooked in a water bath, broken into a buttered dish. Poached eggs are broken directly into water.

Grace - I agree! I really don't understand people who don't like runny eggs.

See..I always thought coddled eggs were eggs that were between half boiled and hard boiled... whatever, this looks really superb!

Heather - I was thinking it'd be quite a good one to make at work too. If I can ever figure out how to microwave eggs.

Dharm - I have heard that usage too, especially for making caesar salad dressing!
