I love beetroot and think this would be delicious. I'm imagining a Bollywood colour riot on your plate with yellow rice, something tandoori, a spinach dish, the beetroot saute and some other side dishes.

This is great, always on the look out for something to do with beetroot and I love curry. Also like the sound of your mother's riot on a plate!
