Meat Free Monday: Baid bi tamaten

Tomatoes, hollowed out and nestled onto wholemeal pita bread. Their flesh cooked with onions and herbs, packed back into the shells, topped with an egg, cheese and za'atar and baked. This recipe, from Sally Butcher's book Veggiestan, is delicious, satisfying and remarkably forgiving of being microwaved at work. I'd be keen to try more of these recipes, but when I tried to order a copy of the book Amazon said it was unavailable - so I will have to venture into an actual bricks & mortar shop to get it.

This sounds delicious, although those odd people who can't stand eggs and tomatoes together won't think so! :)

It's worth rechecking Amazon before paying full price in a bookshop.

that recipe combines my comfort food staples (tomato,egg,cheese)with the exotic. How interesting.

Suelle - I will - it was very odd though. Confirming the order and then cancelling it, although the book still shows as being available.

Rachel - from what I have seen of the recipes, it's definitely worth buying.

Mother - mine too. Wonder how that happened! Easily scalable for fewer portions too.

Oooh this sounds yummy, and a great lunchbox item! I must confess I've had Veggiestan sitting in my pile of as-yet-unread cookbooks for quite a while (as a devoted carnivore I keep picking up more meaty books instead) but this sounds so good I shall have to give it a go - and try out the rest of the book too!
