Courgette fritter

This was inspired by Historically Hysterical's recent effort - but I decided that I would rather stand out by the barbecue talking to my husband than frying individual ones. So I just made one big flat oven-baked pancake. I used grated halloumi (because that was what I had) and my last egg, so it didn't hold together perfectly, but it was a wonderful side dish for barbecued lamb shoulder. I've made a thicker, more substantial courgette slice often in the past, and with salad it is a wonderful meat-free meal.

:) Sounds good FC, I like the idea of it going with meat...mmm. I am making a courgette slice on the weekend actually, for my friends 10 year vegetarian anniversary party!

Its a great use for zucchini when they overrun the garden later in the summer

Kat - last year we had a woeful crop, we aren't bothering with them this year.

It looks delicious and like the perfect pairing with beef or lamb. I like the idea of making one rather than fussing with a bunch of little fritters too.

Barbecued lamb shoulder? I have never heard of lamb being grilled but I must try it! It looks amazing!

Deb - doing one is much easier - less oily too.

Stacey - I've noticed that Americans don't eat as much lamb as Australians do!

i love this kind of thing. i could eat a stack of those zucchini and mint fritters, and of course your lovely creation too. i have been getting zucchini in my CSA, so I'll have to try something like this soon.

I think it looks wonderful. As long as it tastes great...that's all that matters. I think standing outside talking to your hubby while he's BBQ'ing is certainly alot more important. I do that.

Mother - yes! Asparagus for every meal!

Ali - I really want to join a veg box scheme. It seems to add so much creativity to cooking.

Looks good! This recipe will be perfect for the summer glut of courgettes, I always have a pile of them in my fridge!

Us Greeks make a zucchini fritter and it's a great appetizer or snack offering.

Sam - yes, it is a very tasty way to get through a lot of them.

Peter - I have eaten loads of them at summer barbecues with a Greek or Middle Eastern theme. They are lovely!
