Chicken and peppercorns

I had chicken, I wanted spice and heat, I wanted to use my new chopstick set (£2 in Hong Kong). So I did a chicken-y modification of the green peppercorn tofu recipe, dredging my chunks of chicken thigh fillet in cornflour before frying it really hard in a small amount of olive oil.

The chicken came out of the pan while I made the peppercorn sauce, then went back in to heat through, with some par-cooked tenderstem broccoli. Unfortunately we were out of fresh or grated ginger, so I used a knob of stem ginger cut into slivers, and left out the muscovado sugar, counting on the sweetness from the ginger to balance it out. And it did.

Thanks SSS - I think this will be on high rotation at our house for a while.

Kat - it was very tasty, and pretty quick. The chicken needs quite a while to crisp up, but you can prepare all your other stuff while it is cooking.

Natashya - aren't they pretty? £2 for the whole set!

Nice photo work. I have a darkish kitchen but my pix come out flat. Yours, on the other hand, are quite lovely.

That sounds amazing. I always crave this kind of food - the only thing that could possibly make it better would be copious amounts of noodles.

12th man - thanks! My photography is a bit touch-and-go usually.

Heather - I think rice would be better. The sauce would ooze through rice perfectly, but might not coat noodles properly.

The chicken sounds good. Did the chopsticks come with the cases? Beautiful.

I could've sworn I saw a Pilu in Noosa, but we were being hurried on and I was really hungry so i must have been imagining things :)

I think there was a Pilu in Noosaville - now closed - no connection to the one at Freshwater, Sydney.

Dee - yup - 2 pairs of chopsticks in cases, napkins and placemats came as a set.

Mother - you should try it. I am sure you'd both love it. It has a real bite but the sweet, salty flavour is somehow similar to your Balinese pork.

Sam - all the bits are big; very easy with chopsticks!
